Not because the story is too complex or too complicated to tell, but because these beans – from which a full-bodied, aromatic, pleasant coffee is extracted, easy to drink without sugar – are sold only here, at the Grupo Nabeiro science and technology interpretation and outreach centre, on the Herdade das Argamassas estate, in Campo Maior.
When the team of baristas began working with specialty coffees in 2019, the blend was already present at the ccc. In 2016, the year that marks the opening of the Alquimia shop in the reception area (then only with Delta’s main coffees), it was already being sold in bulk. Since 28 March 2014, when the Centro de Ciência do Café was inaugurated, the blend of the commendatore has been there.
But only later did it become possible to enjoy it on site. “It is a coffee that we make exclusively for visitors to the centre,” says the barista, before mentioning the many customers who come to the shop on purpose to take the blend, which is sold in bulk, as whole beans or freshly ground, or to drink it there.
“It is a different kind of coffee and it is also an experience,” he says. “Our Coffee & Shop is often the first place where people drink a coffee without sugar or without milk. They taste the drink and are pleased with its distinctive flavour, because it is not bitter and it never comes out burnt.” There is a reason for this. Delta baristas receive specific training that allows them to extract the coffee in a way that makes the most of its qualities. And in this blend, a batch whose proportion of arabica and robusta is a secret kept by Rui Nabeiro, quality is something that is never lacking.
